If you like buttery, luxurious eggs, these easy and creamy scrambled eggs set the perfect base for a solid breakfast. You only need three ingredients that you probably already have in your fridge: eggs, butter, and a little cream. Whatever else comes after is at your discretion!

We Need to Talk About Butter

Typically we add oil or butter to ensure eggs do not stick to the saucepan. This recipe calls for a lot of butter to solve this problem. The other reason for this butter is to add flavorsome richness to these creamy scrambled eggs. First, you crack eggs into the saucepan, then you whisk it. After you whisk it, you throw in slabs of cold butter adding up to half a stick. Putting in a bunch of butter sounds amazing, but be careful with the ratios. Too much butter will make goopy eggs.

The Technique to Making Creamy Scrambled Eggs

  • ½ stick (56.5 grams) of cold butter, sliced
  • 4 eggs
  • 2 tablespoon heavy cream
  • salt & pepper (to taste)

Instructions
 

  • Crack eggs into a small saucepan and whisk
  • Add butter slices
  • Place the saucepan on a stove on low heat and start stirring
  • Keep stirring until eggs start to shape into a runny scrambled eggs
